Coconut oil, or copra butter, is a vegetable oil obtained from the kernel or pulp of ripe coconuts harvested from coconut palms (coconut tree). There are various ways to use coconut oil. Due to its high saturated fat content, it oxidizes slowly and is therefore resistant to rancidity, lasting up to six months at 24 °C (75 °F), which is not bad.
Nutrition and fat composition
Coconut oil is 99% fat, consisting mainly of saturated fats (82% of the total volume). 100 grams of coconut oil contains 90 calories. Half of the saturated fats in coconut oil are lauric acid, while other important saturated fats are myristoleic acid and palmitoleic acid. Monounsaturated fats make up 6% of total fats, and polyunsaturated fats make up 2%. Coconut oil contains phytosterols.
