Dried fruits are fruits from which most of the water content has been removed naturally, by solar drying, or with the help of special dryers and dehydrators. Dried fruits have a long tradition of use, dating back to the fourth millennium BC in Mesopotamia, and are appreciated for their sweet taste, nutrients, and long shelf life.

Today, the consumption of dried fruit is widespread. Nearly half of the dried fruit sold — raisins, then dates, prunes, figs, apricots, peaches, apples, and pears — are called ordinary or "traditional" dried fruits: fruits that were dried in the sun or in a heated aerodynamic dryer. Many fruits, such as cranberries, blueberries, cherries, strawberries, and mangoes, are mixed with a sweetener (for example, sucrose syrup) before drying. Some products are sold as dried fruits, such as papaya, kiwi, and pineapple — most often candied.

Traditional dried fruits, such as raisins, figs, dates, apricots, and apples, have been one of the main foods in the Mediterranean diet for thousands of years. This is partly due to their early cultivation in the Middle East region known as the Fertile Crescent, comprising parts of modern-day Iran, Iraq, Syria, and Lebanon, in southwestern Turkey, and northern Egypt. Drying or dehydration also proved to be the earliest form of food preservation: grapes, dates, and figs that fell from trees or vines dried in the hot sun. Ancient hunters and gatherers noticed that these fallen fruits were edible and valued them for their stability and concentrated sweetness.
